CBE Supports Innovation in Sustainable Plant-Based Milk Production

A forward-thinking local startup in Hong Kong has introduced an exciting plant-based milk alternative, TIGA MILK, crafted from tiger nuts, soy, and oats. This innovative product is designed to cater to the rising demand for dairy alternatives, particularly among those who are lactose-intolerant. The initiative was featured on TVB Pearl’s program “A Milky Alternative,” which aired on January 13, highlighting the fascinating technology behind tiger nuts and their transformation into this unique product.
 
Research shows that over 70% of Hong Kong residents are considering plant-based options to meet their health and dietary needs. This startup, with the expert guidance of Prof. Marshal LIU and the invaluable contributions of students from the Department of Chemical and Biological Engineering at HKUST, has successfully developed this sustainable and nutritious product. Tiger nuts, the primary ingredient, are a highly resilient crop that thrives in arid conditions and uses 90% less water compared to traditional crops. This initiative not only addresses the challenges of lactose intolerance but also aids in combating desertification in China, showcasing a sustainable approach to food production.
 
Prof. Liu emphasized the nutritional richness of tiger nuts, which are abundant in fiber, vitamins, and antioxidants. The product is free from added sugar, with its natural sweetness derived through an enzymatic process. This innovative approach ensures a healthier choice for consumers. Local cafes have embraced TIGA MILK enthusiastically, with baristas praising its popularity among customers. Retailers across Hong Kong have also begun stocking this promising product.
 
This collaboration between the startup and CBE exemplifies how academic expertise can drive impactful solutions for real-world challenges. With the plant-based milk market projected to surpass HK$1 billion by 2025, this initiative sets a benchmark for health-conscious and environmentally sustainable practices. By reducing carbon emissions and supporting local farmers’ livelihoods, the product aligns with the global movement toward sustainable living.
